You can install a Linux on Intel Galileo. Thanks to this link : http://ccc.ntu.edu.tw/index.php/en/news/40 you will find Linux Standard Base Image already build. I thinks "Yocto Project Linux image w/ Clanton-full kernel + general SDKs" will be the best for you.
